Happy meal prep Sunday! "Fail to prepare - prepare to fail." - saw on IG somewhere last week.
Sundays are so bitter sweet for me because I love planning, preparing for success, cooking, and inspiring others but I don't really like cleaning all the dishes, trying new recipes that FAIL, and just being so tired by dinner time. If I go shopping on Saturdays, it may be different, but Saturday are my laundry and slumming around the house days.
Anywho! Meal breakdown.
Breakfast: 4 pts
4 pt quest bar
0 pt iced coffee with 1 tbsp sugar free vanilla creamer
Lunch: 6 points
My original meal plan failed so I'm not too proud of this lunch... 3 pt mashed potatoes (just 1/2 c potato, 1/4 tsp light butter, and garlic salt)
0 pt veggie mix
3 pt good thins, 30 g (instead of my meatloaf)
Snacks: 3 points
0 pt chili (instead of as the entree, just a snack size)
0 pt cherry jello Greek yogurt
3 pt veggie straws (serving size is 38 straws for 4 pts but I did only 3 pts for 30)
0 pt banana
0 pt hard boiled eggs (usually eaten on way home from work only if hungry)
Something I've learned is it is better to pack more and bring home leftovers than pack less and get hangry af. So I may not eat some of this, but better safe than sorry. :)
